I write for multiple publishers, so it can be confusing as to which books are available in print, which are available in eBook, and which are available in both formats and when. Hopefully I can try to explain it so it makes sense. Often it doesn't. Don't feel bad if it confuses you. On a good day it confuses me, too.
Books that I've published with Berkley should be available on their release day in both print and eBook. Note I said "should be." Through the vagaries of the distribution process and third party vendors, that's not always the case. Sometimes there are print delays. Sometimes there are eBook delays. The publisher and the distributors will always make the best attempts to have the books available for the public to buy on the date of book release.
My upcoming MIRA books will publish in both print and eBook simultaneously.
Books I've published with Samhain Publishing to date are available in both eBook and print through the Samhain site and many third party vendors, plus you should be able to find them at your local bookstore. If they're not in stock your local bookstore can order them.
The books I've written with Carina Press are available currently in eBook format. Print may come later. I'll keep you up to date as soon as I know more.
Most of the books I've published with Ellora's Cave are available in eBook and print. There are a handful of books that are still only available in eBook. Whether or not an eBook goes to print is up to the publisher. Unfortunately, it's not something an author has any control over. Every publisher is unique in their guidelines for putting a book in print, so it's up to them to decide. Now if I ran the universe....
